I love all of my healthy recipes, but some stand out more than others. I am extremely excited about sharing my favorite guilt free, non-dairy treat, Frozen Banana Ice Cream with Macadamia Nut Butter! Like many others, I stumbled onto the trend of making one ingredient ice cream from frozen bananas. I thought it looked like a cool idea and decided I would finally give it a try. When my bananas started nearing the point of no return I popped them in the freezer. Once they were completely frozen, I gave them a whirl in the blender. It only took me a couple of minutes to make and when I took my first taste it was nirvana! The texture was smooth and creamy just like soft serve! I was absolutely amazed at how frozen bananas could magically turn into ice cream. While it was delicious, I still felt like it was missing something. You could totally make banana ice cream out of frozen bananas alone, but what’s the fun in that? I decided to try some different variations. I’ve made it with mixed berries, peanut butter with chocolate, mango with coconut cream and maple syrup with bacon. It is completely adaptable and the options are only limited by your imagination. The best part is that there is no added sugar and you don’t need an ice cream maker or any special equipment other than a blender or food processor to make it.
In this recipe I’ve added my homemade macadamia nut butter to make it rich and creamy. You can buy macadamia nut butter at your local store or you can check out my previous post on how to make macadamia nut butter at home. I also added Marjool dates for sweetness and it adds these really nice chewy bits throughout the ice cream. Then I add vanilla for flavor and ice to help hold its frozen texture. This is a great recipe for people who are lactose intolerant, vegan or just following a Paleo or a dairy free lifestyle. The bananas are high in potassium, so it makes a great occasional post workout treat. My husband used to love ice cream, but his stomach really doesn’t tolerate dairy very well (he likes to call it Methane Cuddles!), so he gave it up. When I made my first batch of Frozen Banana Ice Cream With Macadamia Nut Butter he literally ate all of it. I mean I didn’t even get one bite. He freakin loves this stuff! He acts just like a kid every time I make it. My point here, ladies, is that this recipe is husband tested and approved.
So everybody should run–not walk–to their kitchens! Peel, slice and freeze your ripe bananas to create this magical frozen treat! I promise just because you are watching your weight or living with dietary restrictions doesn’t mean you can no longer enjoy your favorite foods.
- 3 Frozen Bananas sliced
- 3 Marjool dates (pitted)
- 1 Tbsp Macadamia nut butter
- 1 tsp Vanilla extract
- 4 Ice cubes
- Add frozen bananas to the blender or food processor.
- Add 3 pitted marjool dates, macadamia nut butter, vanilla extract and ice cubes to blender.
- Place the lid on the blender and start blending on a low variable speed for a few seconds and then switch to high. (if using a Vitamix make sure to use the tamper)
- Blend until it becomes creamy, but make sure not to overblend or it will turn into a smoothie. The end result should look like soft serve ice cream.
